Sweet and spicy pork fillet with fresh greens and coriander
Serves: 2-3
Ingredients
For the marinate
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp minced garlic
- 2 tbsp brown sugar
- 1 tsp mustard seeds
- 1 tsp cumin
- 1 chopped red chilli
- ½ tsp cinnamon
- Salt to taste
- 1 tbsp oil (Borges)
- 150-200ml cola
You will also need
- 1 pork fillet
- Fresh mixed green salad leaves (Lambs lettuce & baby spinach)
- Fresh coriander leaves for serving
Method
Start this recipe by placing all of the marinating ingredients into a saucepan and pour in a little cola. Bring to the boil and simmer for 5 minutes then remove off the heat. Allow to cool before bushing this mixture all over the pork fillet and allow to marinate for an hour. When ready to cook, heat griddle pan or you BBQ till hot, the seal the meat all over. Allow to cook, basting with the marinating sauce during cooking. To serve, allow the cooked pork fillet to sit for a few minutes before slicing up. Lay your fresh salad leaves onto a large serving plate or board and lay the pork fillet slices over decoratively. Top with some fresh coriander leaves and serve immediately.
