Supreme of chicken with a gin and tonic apple chutney

Ingredients

  • 2 Chicken supreme
  • 1 medium potato, diced
  • ½ tsp freshly ground nutmeg
  • 30ml fresh cream (Benna)
  • Knob butter (Valio)
  • 1 green apple, diced
  • 1 tbsp. brown sugar (Lamb brand)
  • Bunch fresh mint, chopped.2 lime.
  • 1 cinnamon stick
  • 2 star anise.
  • 1 shot gin
  • Zest ½ lime
  • Juice ½ lemon
  • 100ml tonic water
  • Small bunch baby spinach leaves
  • 3 cloves garlic
  • 1 tbsp. light olive oil (Borges)

Method

Start this recipe by preparing the chutney.  In a small pot caramelize the apple then add in the gin, tonic, lime zest, lemon juice, cinnamon stick and star anise and simmer for 1 hr.. Meanwhile, heat a tbsp. of olive oil in a large pan and grill the chicken on both sides. Finish off cooking in the oven. Next, cook the potatoes in salted boiling water until soft, then mash with the butter, cream, nutmeg and season.

Sauté the spinach in garlic and serve on the crushed potatoes with the chicken on top and drizzled with the chutney.
