Sugar-free biscuit energy bites

Ingredients

Ingredients:

• 100g Sugar-free biscuits, crushed into fine crumbs (Pemix)
• 125g Peanut butter (Pip and nut)
• 60g Honey or maple syrup (for added sweetness, use sugar-free syrup if desired)
• 25g Unsweetened shredded coconut
• 30g Chopped nuts (such as almonds, walnuts, or pecans)
• 30g Dried fruit (such as raisins, cranberries, or chopped dates)
• 5g vanilla extract
• Pinch of salt
• Optional: Additional shredded coconut or cocoa powder for coating

Method

Instructions:

In a mixing bowl, combine the crushed sugar-free biscuits, almond butter or peanut butter, honey or maple syrup, shredded coconut, chopped nuts, dried fruit, vanilla extract, and salt. Stir until well combined. Place the mixture in the refrigerator for about 30 minutes to firm up. Once chilled, roll the mixture into small bite-sized balls using your hands. Optional: Roll the energy bites in additional shredded coconut or cocoa powder for an extra coating. Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least another 30 minutes to set.
