Stuffed Pork Fillet with peppered cheese Almonds and Coriander

Ingredients
- 1 pork fillet
- 200g minced beef
- 1 peppered Cheese, grated (Tan-Nar)
- 50g almonds, crushed
- 3 cloves garlic, chopped
- 1 small onion, chopped
- 1 tsp cinnamon
- 2 tbsp. chopped coriander
- 1 metre string
- 120g small broccoli florets
- 1 carrot
- 1 glass red wine
- 1 glass beef stock
- 1 large potato
- 1 knob truffle or garlic butter

Method
Using a sharp knife flatten the pork fillet and place flat in the freezer for 15 minutes. Meanwhile, sauté the onion, garlic, cinnamon and mix well with the crushed almonds, coriander, peppered cheese and minced beef.
Season the mixture and place on the pork fillet, roll up and use the string to tighten the meat. Place on an oven tray and cook in a preheated oven at 180°C for 30 minutes. In a sauté pan reduce the beef stock and red wine to a thick sauce. Blanch the broccoli and carrots and season with a little butter. Peel and cut the potatoes in cubes and boil until softened. Drain and mash with the flavoured butter and season.
