Stuffed cabbage leaves

Serves:

Ingredients

  • 1 large cabbage
  • 250g minced beef
  • 300g pre-boiled rice
  • 1 small onion
  • ½ tbsp nutmeg
  • ½ tbsp coriander
  • ½ tbsp English mustard
  • 1 large egg
  • Parsley
  • 50g cream cheese
  • 2 garlic cloves

For the sauce

  • 2 large onions, cut lengthwise
  • 2 cloves garlic
  • 500ml chicken stock
  • 300ml white wine

 

Method

Blanche the larger cabbage leaves, one by one in the water with olive oil, set aside and leave to cool. In a large frying pan sauté the onions, garlic, minced meat, coriander. Add the rice, nutmeg, mustard and leave to mature on a low heat. Once reduced turn off, add the cream cheese, egg, parsley. Set as aside and leave to cool. Start by opening flat the cabbage leave and spoon some mince mix, close and tuck and roll as if you’re making bragioli. In a pan cook the onions and garlic. Add wine and stock. Transfer to an oven proof dish, put rolled cabbage and bake for 45-60 minutes.
