Strawberry and fresh cream scones

Serves: 8

Ingredients

For the scones

  • 270g self-raising flour (Lamb Brand)
  • 50g unsalted butter, softened
  • 25g caster sugar (Lamb Brand)
  • 1 tsp baking powder
  • 145ml milk
  • 1 tsp vanilla essence
  • 1 egg, beaten

You will also need

  • 250ml fresh cream
  • 2 tbsp icing sugar (Lamb Brand)
  • Strawberry jam
  • Fresh strawberries, hulled

Method

In a large bowl, sift together the flour and baking powder. Add in the sugar and butter and rub gently with your fingertips till the mixture resembles breadcrumbs. Add the vanilla to the milk and add in, mixing to a soft dough using a spoon (Do not overwork the dough). Leave to rest for 5 minutes, before rolling out on a floured surface to about 1 inch thick. Using a 5cm cutter cut out rounds and place on baking sheets. Brush the tops with the beaten egg and bake in the oven at 220`c, for about 12-15 minutes. Allow to cool completely then cut in half. Whip together the cream with 1 tbsp icing sugar. Spread the scones with a spoon of jam in each, pipe over the whipped cream and arrange over a few strawberry slices. Place on the top and dust with icing sugar before serving.
