Stir fried noodles with herbed chicken strips
Ingredients
- 200g egg noodles
- 1 leek
- 1 red pepper
- 1 onion
- 3 tbsp sesame oil
- 4 tbsp soy sauce
- 12 breaded chicken strips (Golden Foods)
For the dipping sauce
- 1/2 onion
- 1/2 green pepper
- 5 tbsp tomato ketchup
- 4 tbsp pineapple juice
Method
Place the defrosted chicken strips under a grill on high heat until crunchy. Boil the noodles in boiling water, meanwhile heat a pan and and fry the onions, leeks and red peppers cut in julienne in sesame oil until softened, than add noodles and soy sauce, toss well and serve. To prepare the dipping sauce, fry the vegetables lightly before adding in the tomato ketchup and pineapple juice. Turn down the heat and simmer for a further 5 minutes. Serve the dipping sauce on the side in a small bowl with the stir fried noodles and chicken strips.
