Sticky cranberry and orange chicken wings

Ingredients

For the marinade

  • 20 pieces chicken wings
  • 2 tsp paste (Umami)
  • Fresh ground salt and pepper
  • 1 tbsp grated ginger
  • Zest of an orange and a lemon
  • 1 chopped fresh chilli
  • 1 tsp corn flour

For the sauce

  • 200ml fresh orange juice
  • 200ml cranberry juice (Ocean Spray)
  • 100g brown sugar
  • 2 tbsp cranberry sauce (Ocean Spray)
  • 2 spoons dark soy sauce
 

Method

Cut the chicken wings in halve, mix together with the remaining ingredients and allow minimum of 2 hours marinade. Roast the chicken wings for 20 minutes. To make the sauce, whisk all the ingredients together, pour into a sauce pan and simmer gently until slightly thickened. Add the chicken wings to the sauce and toss until coated; simmer again to glaze. Return to baking tray and roast for a few further minutes until they turn sticky.

  • 20 biċċiet ġwienaħ tat-tiġieġ
  • 2 kuċċarini paste
  • melħ u bżar
  • mgħarfa ġinġer maħkuk
  • qoxra ta’ larinġs u lumija
  • bżaru aħmar frisk mqatta’
  • kuċċarina ‘cornflour’

Għaz-zalza

  • 200ml meraq tal-larinġ
  • 200ml meraq tal-cranberry
  • 100g zokkor ismar
  • 2 mgħaref zalza tal-cranberry
  • 2 mgħaref soy sauce
