Spinach and ricotta patties

Ingredients

  • 1 kg fresh spinach
  • 50g ricotta
  • 50g breadcrumbs
  • 2 eggs
  • Salt and pepper
  • A little nutmeg

Method

Cook the spinach for 10 seconds in boiling water, cool and drain well. In a bowl, mix together the ricotta, spinach, breadcrumbs, salt, pepper, nutmeg and eggs. Form into patties and fry on both sides in a hot pan with a little oil.
