Spiced Turkish chicken with yogurt sauce and pistachio couscous

Ingredients
For the chicken
- 6 boneless chicken thighs
- 4 garlic cloves finely chopped
- 2 tbsp mixed, paprika, nutmeg, cardamom, turmeric, cinnamon
- 1 fresh chilli sliced
- Juice of 2 limes
- 1 tbsp grated ginger
- 2 tbsp fresh coriander chopped
- Fresh seasoning
Yogurt sauce
- 1 chopped garlic
- 2 spoons chopped fresh dill
- 1 cup Greek yogurt (Mevgal)
- Juice of a lime
- Pinch Cayenne pepper
Pistachio couscous
- 1 packet Moroccan couscous (Ainsley)
- Handful chopped mixed dried fruits – apricots/prunes/sultanas
- Mint leaves to taste
- Lemon zest and segments
Method
Trim off excess fats from chicken and score with a sharp knife so that the marinade goes in the chicken and squeeze the limes. Mix the remaining ingredients and roll the chicken in to coat with the marinade. Allow marinating time, grill before serving. For the yogurt sauce, combine all the ingredients together into a creamy sauce. Serve as a side sauce.
