Spiced coffee rub grilled pork fillet, new potatoes and caramelized apples

Seasoning ingredients
- 1 tbsp espresso coffee
- Pinch chilli powder
- 1 tsp brown sugar
- Pinch English mustard powder
- ½ tsp of each cumin, oregano, garlic and ginger, paprika, onion powder
- Freshly ground black pepper
- Sea salt
- 1 pork fillet
- 1 tbsp vegetable oil
- 8 boiled new potatoes
- 2 cooked carrots
- 2 apples
- Zest and juice of an orange
- Thyme springs
- 1 tsp brown sugar
- 1 tbspbutter
- 1 small glass sweet red wine
Method
Combine all the seasoning ingredients well. Trim pork fillet from excess fat and brush lightly with the vegetable oil. Rub the meat with the seasoning ingredients with your finger tips and let rest for at least 30 minutes. To make the caramelized apples; peel, core and chop the apples into dice. Melt the butter in a sauté pan, add the apples and stir in the brown sugar and allow to caramelize. Add the orange and enough wine to reduce into a toffee like sauce. Meanwhile cut the potatoes in halve season well and grill Grill the pork fillet just before serving. To serve, Slice the pork fillet, spoon the carrots onto a serving plate and top with the pork slices. Accompany with the new potatoes and a drizzle of the apple sauce.
