Smoked salmon balls

Ingredients

  • 4 wide slices smoked salmon
  • 10 cooked prawns
  • zest and juice of a lemon
  • 2 spoons mascarpone cheese
  • 3 spoon mayonnaise
  • fresh seasoning
  • 1 tsp chopped parsley
  • 1 shallot, finely chopped
  • 1 spoon tomato ketchup
  • 1 tot brandy
  • pinch sweet paprika powder
  • few salad leaves and lemon wedges to garnish

Method

The idea of this recipe is to shape a ball of smoked salmon filled with a mixture of marinated prawns. Start by marinating the prawns. Mix together ½ lemon zest, 1 spoon lemon juice, the mascarpone cheese, chopped parsley, chopped shallot, 1 tbsp mayonnaise and the prawns. Now in a separate bowl prepare the sauce by mixing the remaining mayonnaise together with the paprika, tomato ketchup and brandy. When all the prep is ready you can now start to make the salmon balls. Place a large piece of cling film on your chopping board and place 2 slices of smoked salmon overlapping each other in the centre. Spoon out ½ of the prawn mixture in the centre of the salmon. Carefully overlap the sides of the smoked salmon over the prawns. Pull up the 4 corners of the cling film and lift the salmon, making a little pressure so that it starts to transform into a ball. Now twist the ball so that it firms up into a neat spherical shape. At this stage allow to rest in a refrigerator for at least 15 min. Repeat the process with the remaining ingredients. Serve the salmon balls garnished with the salad leaves, and accompanied by the sauce and lemon wedges. Suggested accompanying wine: DELICATA Gran Cavalier barrel fermented Chardonnay D.O.K.
