Smashed avocado on toast with crumbled feta, soft eggs and chilli oil

Ingredients

  • 150g frozen avocado, defrosted (Asiago)
  • 1 lime, zest and juice
  • Salt and pepper
  • Fresh coriander leaves
  • 80g feta or Danish cheese (Emborg)
  • 4 eggs, poached (Le Naturelle)
  • 2 thick slices toasted Maltese bread or sourdough

You will also need to serve

  • Good pinch chilli flakes 
  • Drizzle chilli oil
  • Bunch micro greens

Method

Start by drizzling the bread with a little olive oil and toast lightly in a pan. Place the avocado in a bowl with a pinch of chilli flakes, salt and pepper, lime juice and zest and smash together. Spoon over the toast and crumble over the feta or Danish cheese. Next, heat a pan with hot water and add in a tsp of vinegar. Poach the eggs , keeping soft in the centre, remove carefully and drain onto kitchen paper. Serve on top of the toast and serve decorated with the micro greens, chilli flakes and chilli oil.
