Salmon fillet with oranges, Pea & bacon wholegrain rice

Ingredients
- 2 salmon fillets
- 2 garlic cloves, peeled and minced
- Few rosemary springs
- 200ml chicken stock
- Zest and juice of 2 oranges
- 1 spoon honey (Good Earth)
- Juice of ½ a lemon
- 1 spoon corn flour (Lamb brand)
- 100g wholegrain rice (Riso Flora)
- 1 finely chopped onion
- 6 slices streaky bacon
- 2 spoons freshly chopped mint
- Juice of ½ a lemon
- 1 cup frozen peas
- Fresh seasoning
- Extra virgin olive oil for cooking

Method
Season the salmon fillets with salt & pepper, sear quickly in a hot pan with the extra virgin olive.
Remove the salmon from the pan and cook in the same fats the garlic and rosemary, pour in the chicken stock, allow simmering by half. Next stir in the orange zest and juice, lemon juice and honey.
Bring to a simmering point and thicken with diluted corn flour.
Cook the rice according to packet instructions. In a separate pan shallow fry the onion and bacon until golden. Stir in the cooked rice, peas, lemon juice and chopped mint. Serve the salmon on a bed of rice accompanied with the orange sauce
