Roasted pumpkin and red onion salad with Goat`s cheese

Serves: 2

Ingredients

For the salad

  • 500g peeled pumpkin, cut into wedges
  • 4 whole cloves garlic, peeled
  • 3 red onions, peeled and cut into quarters
  • 2 heaped tsp ground cumin
  • Fresh seasoning
  • 1 handful cherry tomatoes
  • 1 handful rucola leaves
  • 2 tbsp toasted pine nuts
  • 3 plain goat`s cheeselets (Gbejniet)
  • 1 pitta bread, cut into pieces and toasted

For the lemon and paprika dressing

  • 1 lemon, zested and juiced
  • 1 clove garlic, chopped
  • 2 tsp sweet paprika
  • ½ tsp caster sugar
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic oil
  • Fresh seasoning
 

Method

Place the pumpkin, oil, cumin and onions on a baking tray and mix together well. Season well with salt and pepper and bake in the oven at 200`c for 20-25 minutes or until the pumpkin is cooked. Meanwhile prepare the dressing by whisking all the ingredients together. To serve, place the salad leaves into 2 serving plates and arrange over the tomatoes, pine nuts, goats cheese and drizzle over the dressing. Spoon over the cooked pumpkin and onions and serve with the toasted pitta bread wedges.

  • 500g qargħa ħamra mqaxxra u mqattgħa f’biċċiet
  • 4 sinniet tewm sħaħ imqaxxrin
  • 3 basliet ħomor imqaxxrin u mqattgħin f’erbgħa
  • 2 kuċċarini mburġati kemmun mitħun
  • Ħwawar friski
  • 1 ponn tadam ċirasa
  • 1 ponn weraq tal-aruka
  • 2 mgħaref prinjoli inkaljati
  • 3 ġbejniet bojod tal-mogħża
  • 1 ħobż pitta mqatta’ f’biċċiet u mixwi
Għat-taħwira tal-lumi u l-paprika
  • 1 lumija, il-qoxra maħkuka u l-meraq tagħha
  • 1 sinna tewm imqattgħa
  • 2 kuċċarini paprika ħelwa
  • ½ kuċċarina zokkor fin (caster sugar)
  • 3 mgħaref żejt taż-żebbuġa extra virgin
  • 1 mgħarfa ħall balsamiku
  • Ħwawar friski
 

Method

Poġġi l-biċċiet tal-qargħa ħamra, iż-żejt, il-kemmun u l-basal f’tilar tax-xiwi u ħawwad kollox flimkien. Ħawwar tajjeb bil-bżar u l-melħ u aħmi f’temperatura ta’ 200oC għal 20-25 minuta, jew sakemm il-qargħa ħamra ssir. Sadattant lesti t-taħwira billi tħawwad l-ingredjenti kollha flimkien. Biex isservi, poġġi l-weraq tal-insalata f’2 platti, itfa’ t-tadam, il-prinjol u l-ġbejniet u ferrex it-taħwira. Poġġi l-qargħa ħamra u l-basal imsajjar u servi mal-biċċiet tal-ħobż pitta.
