Ricotta cheese mini frittatas

Serves: 12

Ingredients

  • 400g ricotta cheese
  • 4 eggs
  • 1 tbsp chopped parsley
  • 1 tbsp chopped rosemary
  • Salt and pepper
  • You will also need different filling ingredients such as cheeses and chopped vegetables

Method

Start this recipe by greasing a 12-hole muffin tin with a little olive oil. Next, mix together the ricotta, eggs and chopped herbs. Season well with salt and pepper and fill the prepared tins ¾ full with the mixture. Next, add in some finely chopped vegetable and cheese into each frittata. Place into the oven at 200`c and bake for approximately 30 minutes. When you remove from the oven, carefully loosen the frittatas with a small palette knife. Allow to cool before removing from the tin. Can be serve d hot or cold.

Different filling ideas: Feta cheese, black olive and spring onion or Cheddar cheese, bacon and tomato or Red pepper and Parmesan or Salmon and dill
