Rice paper vegetable rolls with lemon couscous

Ingredients

  • 1 packet rice paper  wrappers
  • 1 tbsp olive oil
  • 100g tabbouleh couscous (Tipiak)
  • 2 carrots, peeled and cut into sticks
  • 1 small cucumber, deseeded and cut into strips
  • 1 red and 1 yellow pepper, deseeded and cut into thin strips
  • 1 avocado, peeled and sliced
  • Fresh basil or mint leaves
  • 5 tbsp garlic mayonnaise (Hellmann’s)
  • 1 tsp lemon zest
  • 1 tsp sweet paprika

Method

This is a very easy recipe to prepare. Make up the tabbouleh couscous by adding in 200 ml boiling water and the olive oil and allow to sit covered for 10 minutes. When ready, fluff with a fork. Next, soak a wrapper in a plate of water for 30-40 seconds. Remove and pat dry using a kitchen towel. Mix together the garlic mayonnaise, lemon zest and paprika and spoon a little in the middle of the wrapper. Lay over a spoonful of tabbouleh, sliced carrot, peppers, cucumber, avocado and a basil leaf and roll up tightly. Repeat with the remaining ingredients and serve cut in half with extra of the mayonnaise in a side bowl.
