Red velvet waffles with vanilla ice-cream and raspberries

Serves: 4

Ingredients

For the batter

  • 225g plain flour (Lamb Brand)
  • 2 tsp baking powder
  • 70g caster sugar (Lamb Brand)
  • ½ tsp salt
  • 350ml milk
  • 2 large eggs
  • 115g melted butter
  • 1 tsp vanilla essence
  • 1 tbsp red food colouring

You will also need

  • Icing sugar (Lamb Brand)
  • Fresh raspberries or berries
  • Caramel & vanilla ice-cream
  • White chocolate sauce

Method

In a bowl, mix together the milk, eggs, melted butter, vanilla and food essence. In another bowl mix together the flour, baking powder and salt. Mix the dry ingredients into the wet ingredients using a fork then allow to sit for 5 minutes. Meanwhile, heat your waffles maker and pour in the prepared batter. Cook the red velvet waffles according to your machine/liking, I like to cook this recipe on a light colour setting for 3 or 3 ½ minutes only. When cooked, carefully remove from the machine and cut the waffles in half. Serve the waffles dusted with icing sugar. Top with a scoop of ice-cream on top of each, spoon over the fresh raspberries and generously drizzle with chocolate sauce.
