Red velvet and white chocolate chip cookies

Serves: 30

Ingredients

  • 400g plain flour
  • 2 tsp baking powder
  • ¼ tsp bicarbonate of soda
  • Pinch salt
  • 180g unsalted butter
  • 265g granulated sugar
  • 2 eggs
  • 1 tbsp milk
  • 2 tsp vanilla essence
  • 2 tsp lemon juice
  • 1 1/2 tbsp red food colouring
  • 140g white chocolate chips
  • Icing sugar

Method

In a large bowl, beat together the butter and sugar till light. Beat in the eggs one at a time, then mix in the milk, vanilla, lemon juice and red colouring. Mix in the dry ingredients next, the flour, baking powder, soda, salt and chocolate chips. Place in the fridge for an hour to firm up. When ready, form into balls and roll into the icing sugar to coat completely. Place onto baking sheets lined with non-stick paper and flatten down slightly. Bake at 180`c for 13-14 minutes.
