Quinoa stuffed turkey breast with apples and prunes
Serves: 4
Ingredients
- 1kg turkey breast, cut open
- 1 tbsp olive oil (Borges)
- 1 small onion, chopped
- 2 cloves garlic, chopped
- Chopped rosemary and thyme
- 1 apple, peeled, cored and chopped
- 50g chopped pistachios
- 50g chopped ready to eat prunes
- Zest of an orange
- Salt and pepper
- 75g quinoa, cooked in stock (Tipiak)
- 6 slices streaky bacon
- You will also need roasted vegetables and potatoes for serving
Method
Start this recipe by frying the onion, garlic, apple and herbs together for 5 minutes with a tablespoon of olive oil. Remove off the heat and stir in the pistachios, prunes, orange zest and season with salt and pepper. Lay open the turkey breast and lay over the stuffing mixture. Roll up tightly and wrap over the bacon slices. Wrap up in foil and place onto a baking tray. Bake in the oven at 200`c for 30 minutes then remove the foil and continue to cook for 20 minutes. Remove from the oven and allow to rest for 5 minutes before cutting up and serving with roasted potatoes and vegetables.
