Puffed rice chicken nuggets

Ingredients
500g Chicken Breast (SPA)
Wet Coating:
1 cup All-Purpose Flour (Lamb brand)
1/2tsp Salt
1/4tsp Ground Black Pepper
1/2tsp Garlic Granules
1/4tsp Smoked Paprika
1/2tsm Mixed Dry Herbs
250ml Ice-Cold sparkling water
1 Fresh Egg (Coccodi)
Dry Coating:
1cup All-Purpose Flour
1tsp Salt
200g Puffed Rice (unsweetened)
Method
Cut the chicken into bite sizes.
Mix all the wet ingredients into a bowl until you get a pancake batter consistency.
Mix the dry ones into another bowl.
Pass the chicken from the dry mixture, then into the wet mixture, removing the access.
Coat the chicken well with the puffed rice and place it on a baking sheet.
Bake in a hot oven until nice and crispy. This should take about 25 minutes making sure that the chicken is well cooked.
