Poached pears in red wine, cinnamon and nutmeg

Serves:

Ingredients

  • 2 pears
  • 300ml red wine
  • 100g sugar
  • 10g cinnamon
  • 10g nutmeg
  • 1 lemon
  • 1 orange
  • 100ml custard
  • 10g raisins
  • 300ml water

Method

Bring the water to the boil with the sugar, nutmeg cinnamon, lemon zest and orange peel . Add red wine and simmer. Meanwhile, peel the pear and poach in the red wine liquor for 15 minutes at a low heat and allow to cool. Remove the pears, core and fill with custard and raisins before serving.
