Pasta with swordfish and avocado cream

Serves: 2

Ingredients

  • 150g swordfish
  • 1/2 avocado
  • 200ml cream (Hopla Montare)
  • 1/4 glass white wine
  • 50g feta cheese
  • 1 tsp chopped Sage
  • 3 cloves garlic
  • 1 leek
  • 6 cherry tomatoes
  • 200g cooked pasta (Di Martino)

Method

Dice the swordfish and seal in a well preheated sauté pan with little olive oil, remove from heat and using the same pan add the chopped garlic and shredded leeks. Allow vegetables to start browning and add the white wine, simmer by half and add the avocado, sage and cherry tomatoes. Toss for 1 minute and pour in the cream and crushed feta, stir continuously on low heat until sauce is thickened than toss in the pasta.
