Pasta Caprese
Serves:
Ingredients
- 500g short pasta
- 2 cups chopped tomatoes
- 2 tbsp crushed garlic
- A bunch of chopped fresh basil
- Extra virgin olive oil
- 2 large mozzarella di buffola balls, chopped
- Crushed black pepper
- Salt
- Few drops of vinegar to taste
- A pinch of chili flakes (optional)
- Fresh chopped parsley
Method
In a large bowl mix all ingredients cover and put in fridge, bring out from fridge15 minutes before serving. Cook pasta, when ready drain and mix straight away into the tomato marinade. Stir well and serve.
