Parmesan baked chicken with mozzarella and Italian sauce

Serves: 2

Ingredients

  • 2 chicken breasts, sliced in half
  • 2 tbsp mayonnaise (Hellman’s)
  • 3 tbsp breadcrumbs
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp finely chopped fresh herbs (parsley, thyme, rosemary)
  • 1 ball mozzarella, sliced
  • 6 tbsp Italian tomato sauce
  • Salads leaves for serving
 

Method

Start this recipe by mixing together the breadcrumbs, Parmesan and chopped herbs and season well with salt and pepper. Next, brush the 4 chicken slices all over with the mayonnaise and dip into the Parmesan crumb mixture, ensuring to coat all over. Place on a baking tray, drizzle with a little olive oil and bake for 10 minutes at 200’c. When ready, remove from the oven and lay over the sliced mozzarella. Spoon over the tomato sauce and return to the oven for a few minutes to soften the cheese. Serve immediately with a nice crispy salad.
