Parmesan and sesame chicken sticks

Ingredients

For the Parmesan chicken sticks

  • 1 large chicken breast, cut into strips
  • 3 tbsp Greek yogurt
  • 5 tbsp fresh breadcrumbs
  • 3 tbsp grated Parmesan
  • 1 tbsp chopped parsley
  • Salt and pepper to season

For the sesame chicken sticks

  • 1 large chicken breast, cut into strips
  • 2 tbsp honey
  • 2 tbsp wholegrain mustard
  • 5 tbsp fresh breadcrumbs
  • 3 tbsp sesame seeds
  • Salt and pepper to season
  • You will also need some ketchup, sour cream or mayonnaise for serving
 

Method

For the Parmesan chicken skewers, mix the chicken strips with the Greek yogurt. Mix together the breadcrumbs, Parmesan, parsley and season with salt and pepper. Dip the chicken pieces into the crumb mixture and coat all over. Thread the chicken pieces onto skewers and place onto a baking tray. Bake for 10-15 minutes at 200`c. For the sesame chicken skewers, mix together the honey, wholegrain mustard and add to the chicken strips to coat. In a bowls, mix together the sesame seeds, breadcrumbs and season well with salt and pepper. Dip the chicken pieces into the crumb mixture and coat all over. Thread the chicken pieces onto skewers and place onto a baking tray. Bake for 10-15 minutes at 200`c. Serve the skewers with ketchup and mayonnaise.
