Pan fried duck breast with beans and hazelnuts

Serves:

Ingredients

  • 1 duck breast
  • 100g runner beans
  • 2g hazelnuts
  • Olive oil
  • Honey
  • Rock salt
  • Cracked black pepper

Method

Season well the duck breast with rock salt and black pepper. Place a pan on high heat. When hot place the duck, (skin side down first) cook for 5 minutes and turn. Drizzle with some honey. Remove the duck from the pan and rest. Cook the beans for 2 minutes in a large pan of lightly salted boiling water. Drain and rinse with cold water. Slice the duck and plate. Serve with chopped hazelnuts and drizzle with olive.
