Paccheri all Amatriciana con frutti di Mare

Ingredients
- 500g paccheri pasta
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 1 tbsp olive oil (PREGO)
- 100ml wine
- 1 pinch dried crushed chilli
- 1 tbsp tomato puree (ROSITA)
- 1 tin tomato polpa (ROSITA)
- 100g bacon (PREMIER SELECTION)
- Chopped parsley and basil
- 1 Calamari
- 300g mixed shellfish
Method
This recipe is a twist of the classic Amatriciana sauce with the addition of sea food. Shallow fry the onion and garlic in a tablespoon of olive oil until soft, stir in the chopped bacon and cook for further 3 minutes. Stir in the tomato paste and moisten with a splash of white wine. Add the tomato pulp and the peperoncino, and cook for further 5 minutes. Stir in the seafood and herbs, reduce the heat and cook until the calamari is soft and the shellfish open up.
