North African Oat Milk Puddings

Ingredients

  • 65g granulated sugar (Lamb brand)
  • 30g cocoa powder
  • 2 tbsp corn flour (Lamb brand)
  • Pinch of cardamom
  • Pinch of sea salt flakes
  • 480ml chocolate oat milk (Natrue)
  • 120g dark chocolate, finely chopped
  • 1 tsp vanilla extract
  • 1 tsp orange blossom water 
  • Zest of 1 orange
  • 50g pistachios, roughly chopped (Lamb brand)
  • Pomegranate seeds (optional)

Method

In a medium saucepan, silicone spatula to stir together the sugar, cocoa, cornstarch, cardamom and salt. Slowly stir in the chocolate oat milk and keep stirring until smooth and combined.

Stir the mixture constantly over medium-low heat, scraping the bottom, sides and corners of the pan, until the pudding thickens, begins to bubble, and coats the back of the spoon or spatula, 5 to 10 minutes.

Add the chocolate and stir vigorously until the pudding is very thick and smooth, about 30 seconds longer.

Remove from the heat and stir in the vanilla, orange blossom water and orange zest. Spoon the pudding into individual cups or ramekins. Serve warm, at room temperature or chilled with the chopped pistachios and pomegranate seeds on top.
