Breaded veal involtini, potato salad and roasted cherry tomatoes

Ingredients

  • 4 veal slices
  • 2 Parma ham slices
  • Spinach and mozzarella mix (Orogel)
  • 2 beaten eggs (Le Naturelle)
  • Flour for dusting (Lamb brand)
  • Panko bread crumbs (Lamb brand)
  • 2 boiled potatoes cut in cubes
  • 1 spoon basil pesto
  • 2 spoons black olives sliced
  • Extra virgin olive oil
  • 100 g cherry tomatoes split in halve
  • Garlic cloves
  • Fresh rosemary springs
  • Fresh basil leaves
  • Pine nuts (Lamb brand)

Method

Place the cherry tomatoes onto a roasting pan, season with salt and pepper, garlic and rosemary.

Bake in a moderate oven for approx. 15 minutes.

Season the veal slices with salt and pepper, place a slice of ham on each slice and top up with the spinach mix. Roll into involtini, pass through flour, dip in egg and roll in bread crumbs. Grill, bake or fry as you desire. 

Mix boiled potatoes with pesto, olive oil and black olives, serve warm.

Serve the cooked veal pockets together with the potato salad and roast cherry tomatoes, drizzle with extra virgin olive oil, sprinkle with basil leaves and pine nuts.
