Minted chocolate and caramel dessert

Serves: 6

Ingredients

  • 500g digestive biscuits, crushed
  • 100g melted butter
  • 500ml whipping cream
  • 1 tin condensed caramel
  • 150g peppermint chocolate, chopped

Method

This recipe can be made in one rectangular dish or in 6 glasses. Start this recipe by mixing the melted butter and crushed biscuits together. Place ½ into the base of a serving dish and press down evenly (like when making the base of a cheesecake) Next, Whip the cream to stiff peaks, then gently fold in the condensed caramel. Spoon ½ of the caramel cream mixture of the biscuits and spread out and sprinkle over ½ of the chopped mint chocolate. Repeat the process with the remaining ingredients, finishing off with a layer of chocolate on top. Chill in the fridge for a few hours before serving.
