Mediterranean veggie tart

Ingredients

1 Gluten-free pizza base (Schar)
Olive oil, for brushing (Borges)
For the toppings:
1/2 Cup herbed cream cheese or garlic-infused olive oil
1 Small Onion, thinly sliced
1 Small zucchini, thinly sliced
1 Small eggplant, thinly sliced
1 Red bell pepper, thinly sliced
1/4 cup Crumbled goat cheese
Fresh thyme leaves, for garnish
Salt and pepper, to taste

Method

Preheat your oven to the temperature specified on the gluten-free pizza base packaging or recipe instructions.Place the gluten-free pizza base on a piece of parchment paper on a baking sheet.Brush the surface of the pizza base lightly with olive oil. Spread a layer of herbed cream cheese or garlic-infused olive oil over the surface of the pizza base, leaving a small border around the edges.Arrange the thinly sliced zucchini, eggplant, and red bell pepper over the cream cheese or olive oil layer, overlapping slightly. You can create a pattern or layer them randomly. Sprinkle the crumbled goat cheese evenly over the vegetables. Season the tart with salt and pepper to taste, and sprinkle with fresh thyme leaves for added flavor. Place the baking sheet with the assembled tart in the preheated oven and bake according to the instructions for the gluten-free pizza base, or until the crust is golden and the vegetables are tender. Once baked, remove the tart from the oven and let it cool slightly before slicing. Serve the Mediterranean Veggie Tart warm or at room temperature, garnished with additional fresh thyme leaves if desired.
