Mediterranean chopped salad with chicken chunks
Serves: 4
Ingredients
Chicken marinade
- Greek yogurt (Mevgal)
- Sun-dried tomatoes (Camel Brand)
- 2 garlic cloves
- Fresh mint leaves
- 100g almonds (Lamb Brand)
- Chilli flakes
- Olive oil (Borges)
- 2 chicken breast, cut into chunks
For the salad
- 1 romaine lettuce, washed and chopped
- 1 finely chopped onion
- Chopped cucumber
- 1 yellow pepper, chopped
- 3 chopped tomatoes
- Black olives
- Toasted pumpkin seeds
- Extra virgin olive oil (Borges)
- Cannellini beans
- Juice of one lemon
- Chopped basil and mint
- Fresh seasoning
Method
Whizz the sun-dried tomatoes together with the almonds and garlic into a paste. Blend in enough Greek yogurt to obtain a creamy consistency. Put the chicken chunks in a bowl, spoon halve of the marinade on top of the chicken, blend to coat. Allow marinating in a refrigerator for an hour. Grill the chicken before just before serving. To make the salad, simply mix the chopped ingredients, with the olives, pumpkin seeds, cannellini beans and picked herbs. Season with salt and pepper, drizzle with lemon juice and olive oil only in the last minute before serving.
