Marinated fillet of beef on a glazed carrot and apple salad
Serves:
Ingredients
- 500g beef fillet
- 3 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp sesame seeds
- 1 chopped spring onion
- 2 tbsp roughly chopped coriander
- 1 tsp chopped red chilli
- 2 tsp brown sugar
- 1/4 glass brown beer (Guinness)
- 4 skewers
- 2 pitta breads
For the salad
- 2 large carrots
- 1 green apple
- 4 tbsp plain yogurt
- 1 tbsp pesto Genovese (Star)
- 2 tbsp brown sugar
- 50g butter
- 1 tbsp flaked almonds (Lamb Brand)
Method
Cut the beef in cubes and mix well in a bowl with all the other ingredients, allow to rest for 2 hours and than put the beef into the skewers. Preheat well a griddle pan and grill the beef to medium, remove and simmer some of the left marinade to glaze the beef with. Grill the pitta, quarter and serve on the side. To prepare the salad, cut the carrots in fingers and place on an over tray, melt the butter and drizzle on the carrots. Sprinkle the sugar on and bake until browned.mix the pesto with the yogurt in a bowl, Slice the apple and mix with yogurt. Roast the almond crush and mix with the apples. Once carrots are cooked allow to cool and serve with at apples on top.
