Lampuki involtini

Ingredients
- 2 fresh Lampuki fillets
- Juice of 1 lemon
- 2 tbsp dry breadcrumbs
- 6 pieces sundried tomatoes
- 2 tbsp black olives, chopped
- 1 tbsp capers, drained
- Some fresh marjoram leaves
- Some chopped parsley
- Olive oil
- Salt and pepper
Method
Grease 2 aluminium sheets of around 25x25cms with butter. Place one boneless lampuki fillet on each sheet. Drizzle some lemon juice on each fillet and then scatter the breadcrumbs over the fish. Place the sundried tomatoes, the olives, capers, marjoram and parsley. Drizzle over some olive oil and season. Carefully roll each lampuki fillet to enclose the filling and then roll tightly in the foil. Twist the ends to seal well. Pour some hot water in a shallow baking tray enough to cover the base. Place the prepared rolls and bake in a moderately to slightly hot oven (175 degrees) for 35 minutes. Bring out of the oven, remove the foils and serve. Serve with baked potatoes and a salad.

Poggi t-tadam mqadded, iz-zebbug, il-kappar, il-merqtux u t-tursin. Xerred ftit zejt taz-zebbuga u hawwar bil-melh u bzar. Obrom kull flett tal-lampuki f’bragola bil-mili gewwa umbaghad gerbeb il-bragoli fil-folji tal-aluminium. Obrom it-truf sew biex tissigilla. Ferragh ftit ilma go dixx tal-forn bizzejjed biex tghatti l-qih. Poggi l-bragoli tal-hut fid-dixx u ahmi go forn moderat ghal ftit jahraq (175 grad) ghal 35 minuta. Ohrog mill-forn, nehhi l-folji u servi. Servi ma’patata l-forn u nsalata.
