Lamb cutlets with minted pesto

Serves:

Ingredients

For the pesto

  • Fresh mint leaves
  • Black basil leaves
  • Rucola leaves
  • 1 clove garlic
  • Pinch of sea salt
  • 50g toasted pine nuts
  • Olive oil
  • Grated Parmesan or Pecorino

You will also need

  • Lamb cutlets
  • White wine
  • Salt and pepper for marinating

Method

Marinate the lamb cutlets for about two hrs in the wine mixture. Put all the ingredients of pesto in a blender until creamy. On a hot grill cook the cutlets to medium or you can finish them in a hot oven for more cooking desire. Serve hot, drizzled with a tablespoon of pesto on top.
