Kiwi mussels spoons in lemon zest dressing

Ingredients

  • 4 kiwi mussels (half greenlip mussels in shells)
  • 1/2 lemon
  • 1 leek
  • 2 tbsp olive oil
  • 4 serving spoons
  • 4 fresh basil leaves, chopped

 

Method

Take the mussel meat off the shell put in small bowl and add the lemon zest and squeeze the juice, add the olive oil and chopped basil. Cut the leeks in thin strips and arrange onto the spoons with the marinated mussel on top.
