Individual chocolate cheesecakes with berries

Serves: 4

Ingredients

For the chocolate filling

  • 300g cream cheese
  • 100g whipped cream
  • 40g icing sugar
  • Zest and juice of a lime
  • 100g melted dark chocolate

You will also need

  • 8 chocolate sponge rounds
  • 3 tablespoons liqueur for soaking
  • Mixed fresh berries
  • Mint leaves and chocolate pieces to decorate
  • 4 x 8cm cheesecake rings

 

Method

Start this recipe by making the chocolate filling. Melt the chocolate over a Bain Marie and allow to cool slightly. Place the remaining ingredients in a bowl and gently mix together. Pour in the cooled melted chocolate and mix till well combined. Place the cheesecake rings on a plate or tray and place a round of sponge into each ring. Sprinkle over half of the liqueur and pipe over half of the chocolate filling. Place the remaining sponge rounds on top, and soak again with the remaining liqueur. Cover with the remaining filling and flatten out the top. Chill in the fridge for 30 minutes. When you are ready to serve, remove the rings off the cheesecakes and decorate the tops with the fresh berries, chocolate pieces and mint leaves.
