Honey and beer chicken breast with emmental potatoes
Ingredients
For the chicken
- 400g chicken breast
- 1/2 cup ale (Farsons Red Label)
- 2 tbsp soy sauce
- 1 tbsp whole grain or Dijon mustard
- 1 tbsp honey
- 12 parsley leaves, roughly chopped
For the potatoes
- 2 large potatoes
- 100g emmental cheese
- 50ml fresh cream
You will also need
- 10 French beans
- 6 shallots
- 2 tbsp sugar
Method
To prepare the chicken, mix all the ingredients together and marinade the chicken in for approximately 2 hours. When ready, grill on a preheated grill until browned and cooked through. Meanwhile, slice the potatoes and boil until cooked through, melt the diced emmental in the cream on low heat and mix with the potatoes. Bake until lightly browned and binded. To prepare the beans, melt a tablespoon of butter and toss in the sliced shallots and sugar until browned than add the blanched French beans and season.
