Herbed whipped ricotta with parmesan straws

Ingredients

1 tub x 250g ricotta (Hanini)
2 tbsp olive oil
1 tbsp chopped dill and basil
1 small clove garlic, crushed
Zest ½ lemon

You will also need

1 pre-rolled packet puff pastry
100g grated parmesan cheese (Zanetti)
1 egg beaten (Coccodi)
2 tbsp sesame seeds

Method

Start by making the cheese straws. Unroll the puff pastry and brush lightly with beaten egg. Cover with the grated cheese and fold the pastry in half like a sandwich. Press tightly, brush the top lightly with egg and cover with sesame seeds. Press down firmly using a rolling pin. Cut into thin strips and roll up tightly. Place onto a lined baking tray and bake in the oven at 200`c for 20-25 minutes. Meanwhile, make the whipped ricotta by blitzing all the ingredients together till smooth and creamy. Serve the dip on a large plate or bowl with the Parmesan straws on the side.
