Grilled vegetable tortillas with creamy guacamole and crumbled cheese

Ingredients
For the guacamole
2 Ripe avocados
200g Cream cheese (Emborg)
Zest and juice 1 lime
1 tbsp Fresh coriander leaves
Drizzle olive oil
Salt and pepper to taste
You will also need
2 Red peppers, deseeded, sliced and grilled
12 Slices frozen grilled aubergine (Coccodi)
2 Onions, quartered and grilled
1 Handful rocket leaves
150g Greek cheese, crumbled (Emborg)
2 tbsp Chopped pistachios
Good drizzle olive oil
4 Soft flour tortilla wraps (Santa Maria)
Extra fresh coriander leaves for serving
Method
This is a quick and easy recipe to prepare. For the guacamole, just blitz all the ingredients to a creamy paste. Heat the tortillas on the BBQ grill or a hot pan and spread over the creamy guacamole. Top with the grilled vegetables, rocket leaves, crumbled cheese, toasted pine nuts. Drizzle with olive oil and scatter over a few fresh coriander leaves.
