Grilled aubergine salad with tahini and honey drizzle

Ingredients

For the dressing
2 heaped tbsp. Tahini
2 tsp Runny honey
Juice 1/2 Orange
2 tbsp Olive oil (Borges)
1 tbsp Vinegar
Good pinch cumin (Lamb brand)
Salt to taste
1 Clove garlic
You will also need
1 bag grilled aubergine slices (Orogel)
1 block Greek cheese (Emborg)
Kernels of a pomegranate
Handful fresh mint leaves
1 tsp dried chilli flakes (Lamb brand)

Method

Start this recipe by making the tahini dressing by blitzing all the ingredients together to form a smooth silky dressing. Next, put the salad together by building layers of grilled aubergine, crumbled cheese, pomegranate and mint leaves. To serve, drizzle over the dressing and sprinkle over the dried chilli flakes.
