Gratinated mussels with a zesty Parmesan and walnut crust

Serves:

Ingredients

  • 20 mussels (La Ciurma)
  • 70g butter
  • ½ onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 100g walnuts, chopped
  • Juice and zest of a lemon
  • 25g grated Parmesan cheese
  • 50g fresh breadcrumbs
  • 1 tbsp finely chopped parsley
  • Fresh pepper and salt

Method

Start by heating the butter in a pan with a little oil and sauté the onion and garlic together till soft. Mix in the remaining ingredient. Place the mussels in 3 or 4 onto your clean scallop shells and cover with the crumb mixture. Place under a hot grill and cook for just 2-3 minutes then serve immediately.
