Gluten-free rocket and walnut pesto spaghetti

Ingredients

For the pesto
1 Big bunch fresh rocket, stems removed
1 Clove garlic
75g Parmesan cheese (Zanetti)
50g Walnuts (Lamb brand)
½ Lemon juice
Good pinch salt
100-150ml Extra virgin olive oil (Borges)

You will also need
400g Gluten-free spaghetti (Schar)
Extra rocket, Parmesan and walnuts to decorate

Method

This is a very easy recipe to prepare. Cook the spaghetti in a pan of salted boiling water. Meanwhile, blitz all of the pesto ingredients together and mix into the cooked pasta, adding in a little of the cooking water. Serve into pasta bowls and decorate with the extra rocket leaves, walnuts and Parmesan.
