Gluten Free pasta with spicy coriander pesto & shrimps
Whizz together the coriander, including the stalks, blanched almonds, onion & extra virgin olive oil. Put the pasta to cook into boiling salted water. Place a large pan on moderate fire, drizzle with the olive oil and gently cook the garlic together with the prawns and chopped chilli. Take a ladle spoon full of cooking water and pour over the prawns. Add in the pesto. Drain the pasta and toss with the pesto.
Serve with lime wedges.
