Gluten-free mixed berry muffins
Serves: 9
Ingredients
- 240g gluten-free flour (Dr Schar Patisserie Mix C)
- 150g sugar
- 2 tsp gluten-free baking powder
- 1 tsp xanthan gum
- Pinch salt
- 120g butter, melted
- 120ml milk
- 2 eggs
- Zest of a lemon
- 1 tsp vanilla essence
- 150g mixed berries
- 9 paper muffin cases
- You will also need icing, chocolate and extra berries to decorate.
Method
Start recipes by heating oven to 190`c. Line a 12 hole muffin tin with paper cases. Whisk together all the wet ingredients, then quickly stir in the dry ingredients until almost combined. Finally stir in the mixed berries and DO NOT over mix. Divide equally into the prepared cases and bake for approximately 25 minutes. When cooked and cooled, decorate the top with coloured glace icing and extra berries.
