Gluten free Dutch apple cake

Ingredients
- 180g gluten-free flour (Schar)
- 1 tsp baking powder (Lamb brand)
- Pinch salt
- 1 tsp cinnamon
- ¼ tsp nutmeg
- Finely grated zest 1 lemon
- 120g margarine (Stork)
- 200g caster sugar plus 2 tbsp to decorate (Lamb brand)
- 1 tsp vanilla extract
- 3 eggs (Le Naturelle)
- 140g Greek yogurt
- 3 apples, peeled, cored and thinly sliced
- Vanilla ice-cream for serving (Carte D’or)

Method
Line and grease a 9inch cake tin. Mix together the flour, baking powder, salt, cinnamon, nutmeg and lemon zest and put aside. In a large bowl beat together the margarine and sugar till fluffy, followed by the eggs one at a time. Mix in 1/3 of the Greek yogurt, and then mix in 1/3 of the flour mixture. Continue until you use all the ingredients but do not over mix. Fold in the apples and spoon the mixture into the prepared tin. Sprinkle over 2 tbsp extra sugar and bake at 180°C for 40-45 minutes. Serve with spoonful`s of vanilla ice-cream.
