Gluten-free cola cake

Ingredients
For the cake
- Gluten-free flour (Dr Schar Patisserie Mix C)
- 1 tsp xanthan gum
- 45g cocoa powder
- 1 tsp bicarbonate of soda
- 150g light brown sugar
- 150g butter
- 20ml cola
- 150ml milk
- 2 eggs
- 1 tsp vanilla essence
For the frosting
- 100g gluten-free dark chocolate
- 45ml cola
- 45ml milk
- Whipped cream and chocolate shavings to decorate
Method
Sift the flour, xanthan gum, cocoa and bicarbonate of soda into a bowl and stir in sugar. Melt the butter in a saucepan, add the cola and mix well. Remove from heat. Whisk together the milk, eggs and vanilla. Whisk the cola mixture into the dry ingredients and then whisk in the egg mixture. Pour into a greased 20cm cake tin and bake in pre heated oven temp 180 °c for approximately 35 minutes. Allow to cool slightly, turn out on a cooling rack. To prepare ganache, bring the milk and cola to the boil, remove from heat and add in the chopped chocolate. Pour the ganache over the cake.
