Gluten-free and fat-free carrot and almond cake

Ingredients

  • 5 eggs, separated
  • 250g caster sugar
  • 300g grated carrots
  • 250g ground almonds
  • Zest and juice of a lemon
  • 1/2 shot glass rum
  • 60g Mix Pâtisserie Mix C (Schar)
  • Icing sugar and toasted almonds to decorate

Method

Beat the egg yolks and sugar in a bowl until fluffy. Fold in the ground almonds, grated carrots, grated lemon zest and juice and the rum. Fold in the gluten free flour and carefully fold in the beaten egg whites. Pour the batter into a greased cake mould that has been coated with flour and bake in the oven for 50-60 minutes at 180`c. When cooled completely, sprinkle with icing sugar and decorate with almonds before serving.
