Garlic cauliflower bites with paprika spiced nut crust and minted yogurt dip

Ingredients

For the cauliflower

  • 1 small cauliflower, cut into florets
  • 3 tbsp. flour (Lamb brand)
  • 2-3 eggs, beaten (Le Naturelle)
  • 1 tsp garlic sauce (Pinto’s Pride)
  • 100g panko breadcrumbs
  • 50g raw cashew nuts, finely chopped (Lamb brand)
  • 1 heaped tbsp. smoked paprika
  • 1 tsp onion powder
  • ¼ tsp cayenne pepper
  • Good pinch salt
  • 2 tbsp. chopped fresh parsley
  • Vegetable oil for frying

You will also need

  • 150g creamy Greek yogurt
  • 2 tbsp. chopped fresh mint leaves
  • 2 tbsp. olive oil
  • Drizzle lemon juice
  • Few dashes garlic sauce (Pinto’s Pride)
  • Salt and pepper to taste
  • 2 spring onion, finely sliced

Method

This is a very easy recipe to prepare. I prefer to deep fry, but alternatively you can also bake the cauliflower in the oven for 15 minutes for a healthier option but drizzle with a little olive oil before you bake. In a large deep dish, mix together the panko breadcrumbs, cashew nuts, paprika, onion powder, cayenne, parsley and season well with salt. Place the flour in another dish and the beaten eggs in another dish mixed with 1 tsp garlic sauce. Bread the cauliflower by dipping into the flour, then the egg mixture, then finally into the spiced nutty panko mixture. Heat the oil and fry the cauliflower in small batches till golden brown and crunchy. Meanwhile, make the dipping sauce by simply mixing together the yogurt, chopped mint, olive oil, lemon juice, dashes of more garlic sauce and salt and pepper to taste. To serve, lay the crispy cauliflower bites on a large serving tray, sprinkle the sliced spring onions on top and the minted garlic dip on the side in a bowl.
